NEW CRISPY ROASTED PARSNIPS Preheat the oven to 400°F. Heat a large oil of salted water over high heat until boiling. Add the parsnips then reduce the heat and simmer for 15 to 20 minutes or until the parsnips are tender. Don’t overcook. Drain the parsnips and set aside. Place boiled parsnips on a pan with parchment paper. Cover with another piece of parchment and smash with a rolling pin to flatten them as much as you can. Drizzle with olive oil, sprinkle with salt and pepper. Bake for 20 minut
